cordon-ing-established-soft-fruit-bushes

I was impressed with the cordon soft fruit bed shown on Beechgrove Garden and am wondering if I can make my prolific established red/black/white currants and gooseberries into well behaved cordon shaped bushes.  Or are they too established and old.

I am constantly attacked by the gooseberry bushes and find it hard to pick the small currant berries which hide in their huge complex structure.

Also we grow autumn fruiting raspberries and heard that it is possible to get more fruit from them if they are bent over in a U shape.  Is this correct please?
