  Soup. Roast it and add other roasted veg with some spices of your choice. Same as squashes- they all make great soup for this time of year.

  And you can grate part of it and make a cake, following a courgette cake recipe. Lots on the internet if you don’t have one. 😋

  Thanks all again for the nice recipe suggestions! It's quite warm in London today so I decided to give the "papaya salad" idea a go. Tastes quite nice to me (with fish sauce, lime juice, brown sugar, hot chillis dressing), though my other half still thinks it a bit weird to be eating pumpkin in a salad..
