How are these mean the to grow?

I’ve got these pretty flower plants but the flowers are so heavy and big, abs the branches are so thin and weak they can’t hold them so they fall floppy on the floor. How are these meant to grow ?

Unfortunately, the paniculata hydrangeas can be very top heavy.
They get pruned hard in spring as they flower on new growth [unlike most of the others] but some people find it easier to prune them back a bit less, to give them a more sturdy framework for the new stems.
Other than that, you need to have  a suitable support in place after pruning. Don't feed them either as that can result in lots of softer growth. Just add compost or leaf mould or similar to the soil.  :)
It's a place where beautiful isn't enough of a word....

Thank you! What would be the right thing to do now at this time of the year?

Late winter/early spring [depending on your climate] for pruning  :)
Here's a link to the RHS site which will give you info
