Maybe cut in half longways, scoop out seeds, fill each half with tomatoes and peppers, and roast until cooked? 😋

Google "persian stuffed peppers" recipe, replace the capsicum peppers with your courgette. You can also play around with the recipe by replacing the lamb with mushrooms and go vegetarian if you like.
