    Possibly Centaurea macrocephala.

    just looked it up, if its a globe artichoke it with develop a purple hue and grow a purple flower; at which point it's no longer edible, if it grows a yellow flower its the Centaurea macrocephala which will grow to 1.7m and is not edible, the artichoke grows to 1.5m

    Not a globe artichoke … absolutely definitely not. 😊

    I would also say it's a Centaurea and probably the one pdoc mentioned.  Easier to tell once the flowers open. :)
    A trowel in the hand is worth a thousand lost under a bush.
