What happened to my cauliflower?

This is the second cauli this has happened to in a block of 4. They have grown well but look like they have been eaten by something? Almost like they have been bashed about / frozen or something. I did see a couple of black fly things, not sure of they are the culprits.

They are under debris netting not enviromesh. Is there anything I can do to stop the other 2 going the same way? Thanks

Summer cauliflowers need to have the curd protected from the sun. Fold the leaves over the curd and use clothes pegs or string to fix them in place.

Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.

My suspicion would be slugs as I think I can see their poo there to,the pink/yellow colour is as dove says from the sun.

Oh right thanks I'll try covering them then. Don't think I can do much more about slugs
