    I think that's Betony - Betonica officinalis (used to be called Stachys officinalis).

    Thanks for the help. Starchys officinalis does ring a bell.

    If it's a cultivated form of betony, rather than the wild flower, it could be Stachys monieri 'Hummelo'.
    Since 2019 I've lived in east Clare, in the west of Ireland.
