Some varieties … particularly Italian strains … are very ridged … is that what concerns you? If so that’s nothing to worry about, but I would pick them smaller than that.
They need lots of water … I give my courgette plants a couple of gallons per plant per day … unless we get a lot of really heavy rain, then I miss a day.
Then they’ll grow more quickly and the skins will be less tough.

I thought it could be lack of water, but our other 3 plants, feet away are fine. And the same variety as the other plants. F1 Tarmino, which are 'normal' looking.
Have you tested it to see if it's suffering from bitter fruit. Just wipe your finger on the open end, and touch your tongue if it's overly bitter destroy the plant, it will make you sick.
