At the bottom of the flower spike stalk you'll see a pair of leaves - cut it off just above them and then smaller spikes will appear from the leaf joints

Cut them off, you can save a few seeds for sowing next year. Cutting off will produce more heads usually. Yours may have gone past that stage now though.

I've found these particular ones don't re-flower very well. (Maybe I also left it too late?) I quite like the dried heads so personally would leave them.
