How do I know when my garlic is ready to harvest? Thanks

Garlic is ready to harvest at every stage of its growth.
When young, harvest the upper green part and use as a spring onion replacement.
Then, harvest the scape to extend its growth cycle and to concentrate its energies on forming the garlic bulb instead of letting it flower.
When the leaves topple over, look a sickly colour and the plant appears to be dying off then the bulb will be ready to dig up.

If you want standard garlic pull it up when the bottom third of the plant has gone brown, if you wait longer the paper like skin around the bulb tends to rot, the garlic is still perfectly usable but it won't keep as well.
