Spinach - going to flower

My spinach is trying to flower, but still producing plenty of (smaller) leaves.
Will these be as good to eat or should I pull it out and sow a new crop later in the year?

The leaves will probably taste quite bitter by now … time to pull it up and sow some more.

Just eaten some for dinner. It was nice and flavoursome, but yes, it's changing. Time to start again. I'm not too good at this successional sowing business!

Wow! We have only been able to sow spinach in the last few weeks and you are eating it already.
Our soil has been so cold that germination this year has been awful.
So we will have spinach later on in the year.

We are in north yorkshire and generally have a late start. This is the first time I've managed to grow true spinach. It just never gets going. This year I sowed it into plugs and transplanted them in May. Success!
