The first one with dark stems looks like Cornus to me.
The second one is definitely Weigela florida variegata as @SueMary says.
I had one, and like yours it had some shoots that reverted to green. If you want to keep the variegation you will need to cut those out. The all green leaves produce much more chlorophyll, so grow more strongly and will eventually take over.
In my case I decided that the flowers looked much better against plain green, so I used some of the shoots as cuttings and grew myself a couple of new, non-variegated plants
