New growth on pears and apples

I'm a newbie here, so please forgive me if this has been asked before. I've just moved into a new house and become the owner of 4 espalier fruit trees, 2 pears and two apples.
There's lots of new growth on all trees and I'm wondering if it needs pruning. Do I completely remove it, shorten it or leave it? If so when should it be pruned? Pictures of the growth, which is most notable on the pears, below.

In early spring you just rub off any new shoots growing towards the wall, or towards you (ie not sideways) from the main framework. Don't prune them now!
