I'm growing some matucana sweet pea this year.  If I save the seeds after flowering will they come true following year ?

Yes, they will. As far as I'm aware, all sweet peas come true even if grown next to other varieties.

They do usually come true because they self pollenate mostly. If they become pollinated by Bees, then they will not necessarily come true.

I never keep seed from plants. I always buy fresh seed from reputable suppliers  each year to ensure quality.
