Bare rooted fruit bushes

Hi all
I have recently received my order of fruit bushes from T&M (currently heeled in). The raspberries and gooseberries came as single stem rooted cuttings just over a foot long. I am OK dealing with the raspberries, but not sure how to deal with the gooseberries. Does this mean they have to be dealt with as cordon plants, or can i encourage them to shape into a bush? (Fortunately I'm not short of space). Do I need to prune them hard back to encourage side shoots.
