Bitter tasting apples

Hi all - I have recently moved inherited two old apple trees - last autumn I harvested a great crop but all the apples (I assume to be eating varieties seemed healthy enough but tasted sour - even when cooked - I have no doubt the trees were neglected for a long time and I pruned them back last Year after fruiting - any ideas

They might not have been eating varieties but cookers. Photos of the apples might help as would a description of the trees, height and spread as well as when they flowered and the fruit matured. If you have a very big tree with big apples you might have a Bramley. It can be difficult to tell what a variety might be so look out for a local apple day next autumn which will possibly offer an identification service.
