Advice on fruit tree growing

I am getting a new fence and want to grow fruit trees against it. It’s west facing and I’d appreciate advice on training methods to suit the trees. Salient facts are: I’ve bought a Bramley apple, a Conference pear and a Braeburn apple. I’m dithering about whether to train them as cordons or espalier. Is this purely down to space restrictions or does the fruit type also affect the decision? And I can’t definitively find whether these are spur bearing trees, which seems to be important. Any advice appreciated.
