It looks lovely - as it's supposed to look.

For the paving you could try 'Spray and Leave' and then go over with a pressure washer but using less force.  My pressure washer has a fitting specifically for cleaning paving as it is less aggressive and doesn't blast the sand out.  I've used it on patio slabs and block paving.  https://www.amazon.co.uk/Kärcher-KAT50-Karcher-T50-T-Racer/dp/B002UZNQ0E

I liked the look of both new and the old.
This video goes over how to clean but the stain he uses is horrible

You could use a coloured decking oil. It would need to be done at least once a year or even twice if it gets a lot of sun but I doubt if it's worth the effort and expense.
I have a  brush attachment mention by KT53 and it is more gentle and sealing after as someone suggested would keep the colour on your pavers for longer but once you pressure wash them again you would have to reseal.
Also more planting as suggested already.

I loved the look of the new but it's impossible to keep it looking like that. I like the staggered layout very much.
We had very pale Indian sandstone laid all around the house because I fell in love with the colour variations and inlaid fossils but I didn't appreciate just how dirty it would get. Doesn't mix with muddy wellies!
