  True quince is Cydonia oblonga and is a spreading tree with large pear shaped fruit. Japanese quince is Chaenomeles japonica and is a different species of plant entirely. It is more of a shrub and has much smaller round fruit. When the fruit is processed into jelly or paste it is very similar to that produced from true quince fruit.

  There are two plants commonly called chinese quince - one is Pseudocydonia sinensis and the other is Chaenomeles cathayensis which is like a supersized version of japonica.
