    Oatcakes (scottish type) great with cheese
    Scones

    Fruit pudding/clootie dumpling (If you want to give them heart attacks)

    I have a book called "good things in England" which has many old and odd recipes it's a early 1900's collection of earlier recipes some of which are well out of fashion such as Frumentry and others like the recipes for cardoons and nettles we consider new and modern!

    It's for a 3 course meal @Skandi so scones are out except on a fruit or beef cobbler.   It's to be on May 11th so too early for summer pudding which I don't like anyway - don't get on with the stale white bread element tho maybe it could be improved by using local brioche.   

    It'll be far too warm for Oxtail soup and the dried fruit needed for Clootie dumpling is very expensive here.   They really don't use it much.

    Salmon in pastry with herb sauce – medieval recipe using ginger and raisins

    Fish pie – cod, haddock, prawns and peas in a herby white sauce with mashed potato topping

    Kedgeree – breakfast or lunch dish using smoked haddock, rice and eggs with some light Indian spices

    Curried cod and chick peas

    Summer fish stew – cod or pollock with tomatoes and butter beans but could use Vendée moguettes

    Beef Wellington – beef fillet with a  duxelles of mushrooms all wrapped in pastry

    Steak and kidney pie

    Cottage pie (parmentier de bœuf)

    Lamb

    Breast of lamb (poitrine) with onions

    Scouse pie – lamb and vegetable stew with a pastry lid – Liverpool

    Lamb scouse – similar but no pastry

    Irish stew – lamb neck with lots of potatoes and some carrots and onions

    Lamb and potato hotpot – Lancashire 
    Shepherd’s pie – minced lamb and mashed potato like duck Parmentier

    Pork

    Fidget pie – minced pork with cider, apples, onions and potato in a pastry case

    Pork, apple and cider pie – similar but with chunks of pork shoulder and just a pastry lid

    Irish coddled pork with cider – similar but pork chops and no pastry

    Pork and apple stew with parsley and thyme dumplings

    Guinness and honey glazed pork loin

    Sausage and mash and onion gravy

    Toad-in-the-hole with or without caramelised onion gravy

     Vegetarian

    Butternut mulligatawny – lightly spiced soup with chunky vegetables

    Red Onion tarte tatin – vegetarian adaptation of French classic

    Vegetarian shepherd’s pie – Parmentier with a vegetable base instead of meat

    Glamorgan sausages with a red onion relish – made with Caerphilly cheese,

         breadcrumbs and herbs.   A mix of Vieux Gouda and Cantal cheese will do.

    Welsh onion cake  - layers of sliced potato, leeks, onions and Caerphilly cheese

    Lancashire cheese and onion pie – pastry case and lid filled with cheese and onions

    Shallot, onion and chive tart – open pastry case filled with 3 onion mix

    Somerset stew with cheddar and parsley mash – vegetables in cider with mashed potato

    Pan Haggerty – layers of potato, onions and cheese baked in the oven

    Homity Pie – pastry case filled with potatoes, onions, spinach and cream seasoned with garlic, nutmeg and parsley

    Side dishes, Vegetables and salads

    Crisp slaw – cole slaw made with finely sliced red cabbage, fennel, apple with a mustard dressing.  Endless variations using red or white cabbage, carrots etc

    Champ and Colcannon – Irish mashed potato dishes with added vegetables such as spring onions and grainy mustard or Savoy cabbage and cream and so on.

    Cucumber salad – oriental influence with sesame seeds, soy sauce

    Glazed carrots – slow cooked in the oven with honey and ginger

    Baked beetroot with garlic

    Yorkshire pudding – batter of flour, milk and eggs, baked in the oven and served with roast beef or used to make toad-in-the-hole
    Sage and onion stuffing balls
    Savoy cabbage with shallots and fennel seeds

    Savoy cabbage with caraway seed

    Savoy cabbage with almonds

    Savoy cabbage and leeks braised in cider

    Bubble and squeak – a dish for using up leftover mashed potatoes and cabbage

    Wow. Don't know if it's on the list but a Wellington would impress.
    Just spotted it. That's my vote. If beef fillet is too expensive, you could use poultry.

    Given that Napoleon was on the losing side, how do the French feel about Beef Wellington?  Don’t want to cause an international incident! 😯

    Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.
