Rhododendron removal

I am looking for some advice on removing a very overgrown rhododendron. It has grown all around a small apple tree and 2 small plum trees. It has created a thick tangle of branches and has also rooted into the soil at multiple places. We inherited it in this state from the previous owners of the house.
Am I correct in thinking that it is no good for the apple and plum trees and needs to be removed? What is the best way to remove its roots, I expect they will be very tricky to dig out especially with the other trees growing in between them. If I was to apply some kind of weedkiller to the cut stumps will this go into the soil and also poison the fruit trees?

    They are not the hardest to dig out shallow rooted compared to other plants . I picture would help to decided if they will damage the other trees , rhodi can be cut back hard and regrow fine if they are to big.
