Overwintered beetroot still edible?

Hi all

Being a bit lazy toward the end of the season last year, I failed to clear the veg patch completely. I've got a bunch of beetroots I've pulled up this morning, are they still going to be worth cooking? I composted the bigger ones but are these smaller ones going to be pretty woody?

Thanks all!
I’ve no idea what I’m doing.

I would ... they might need a bit longer cooking ... but go for it , I say ... and let us know what they're like.

If they're 'past their best' but not really 'woody' try this ... it's delicious https://www.deliciousmagazine.co.uk/recipes/spiced-beetroot-relish/

@Dovefromabove & @philippasmith2 well, the little ones were certainly edible. I gave them all a long slow roast wrapped in foil. I'll get back to you on the big ones today!

  • Good size much better than we did this year but we did though pull the very small ones up and used them last week.
Always worth giving them a go.

@bertrand-mabel definitely, I was very close to throwing them in the compost! So far tiddlers and the museum sized ones have been lovely. Will give the bigguns a go later!
