Pruning an apple tree

Hi I moved into a house with two overgrown apple trees. For various reasons I cut them back hard. In hindsight I would’ve read more about it first. But most articles now don’t help me to know what to do after their fierce hair cut. From what I have gathered:
- vertical shoots are due to fierce cutback and fairly useless
- shouldn’t take more than roughly a 1/3 off (obviously a bit late). Not sure if that means a 1/3 of the length of a single branch or a 1/3 of the total branches.  

Any tips would be great. Thank you.
(pictures appeared in odd order but should be obvious which is original tree)

  • That looks great. Thank you. I have watched the first and it is a perfect match for my situation 👍
  • pruning apples can be a problem as it so often ends up with water shoots which don't fruit the following year.
    Agree with the advice @Bob the gardener gave
