Jerusalem Artichokes

We harvested some of our Jerusalem Artichokes today, which we now realise is a bit early.  Can they still be eaten when they are small?

  • Yes, they are just a bit awkward to scrape/peel/scrub when small.  They'll still be edible and will produce the usual results, if you know what I mean! :D

    Some are the size of a Chilli pepper, about 1cm in diameter, others are about the size of a thumb (I know there are big thumbs and small ones!).

    Thanks @philippasmith2  It's not the taste I'm worried about.  From what I understand the Inulin in them (this is the chemical that they contain which has an explosive impact on the digestive system!) is stronger when they are immature, but gradually lessens in mature plants.  I think if anything we will just have more flatulence than normal.
