We bought these at Aldi with the intention of eating & saving the seeds

But

What verities did e buy?

Also, we have never saved seeds from foods before so any tips on how to collect & store them would be much appreciated.

Bottom right looks like an Hokkaido 'Red Kuri' squash ... this should store well for winter.

Bottom left could be 'sweet dumpling'.

I think the top left is a green hokaido, I have a rather fetching blue hokaido shaped squash this year, it's a cross between uchi kiri and a crown prince.. saved seed is always interesting.
