Deadheading Sweet William

When deadheading Sweet William do I just take the flower off, cut down to the next leaves or cut off at the base?
I can't work out where new flowers start but it doesn't look like buds on current stems
Same with Osteospermum?

I always
cut down to the next leaves except for roses.
