    @Blue Onion If you have lots of cherry toms you could try just splitting them in half and laying them cut side up on roasting trays and then semi-dry them in a low oven (with fan if poss but not essential) for a few hours.   Sprinkle with a bit of salt and pepper towards the end if you like then, when ready, pack into sterilised jars, cover with olive oil and shake to eliminate air bubbles then give them the water bath treatment to complete sterilisation.

    Thanks for the suggestion to 'sun dry' the cherry tomatoes!  I just froze them in a baggie after they were done and cool, and have been taking them out in handfuls for my packed lunch salads.. or tossing into store bought pasta sauce, soups, etc.  They took FOREVER to dry.. six to eight hours a batch with two trays at a time.. but so worth it!

    @Blue Onion   Favourite Pasta Sauce Recipe?  Puttanesca - just the best soul food you could eat.  Anchovies; capers, garlic, few black olives, olive oil, parmesan - many variations for this Napolitan recipe.  Some dried tomatoes can be put in too.  Just delicious!!

    That looks good @Blue Onion.  

    @tuikowhai34 for simplicity I think alio, oilo & peperoncino is my favourite pasta sauce with lots of freshly chopped parsley and freshly grated or shaved Parmesan but, for thin days, (still doing the 5:2 diet till Easter) lots of cherry toms halved or quartered and cooked down with some grated garlic and chopped oregano or basil.   No oil, no Parmesan.  Maybe a drop of lemon juice or a fresh chilli to lift it.

    @Obelixx  For a "slim line" pasta dish - shellfish make a lovely sauce.  Few mussels, cockles, squid rings and clams opened in a little olive oil and garlic (fried).  Parsley. Jamie Oliver does a good one  (Seafood Linguine) but cut out the bacon bits.

    I know but mussels and cockles bring on the arthritis and my hands lock.  I do a good linguine with prawns, chillies and tomatoes and lots of herbs which is great for normal days but the tomato sauce above is even lower in calories for thin days.
