I have grown gherkins successfully in the past. I plant them out in the top of my compost heap. When they start producing fruit I keep a glass bowl of salt in the kitchen and as I daily pick I wash and dry them then submerge them in the brine for 24 hrs. I then rinse and dry them on kitchen towel before putting them into a large jar of spiced vinegar, plenty of fennel. Fish and chip shops are a good source for large jars which they will usually give to you free. Some might ask for a donation in their charity box.They will keep for at least 12 months.
