Can I mention that I think you should fill your raised beds with a lot more soil..from the photos they look about half full.

Yes, I was looking at that yesterday! I think whats happened is I put a heavy manure mix in there with the soil, so after a couple of months the levels have dropped as its rotted down.

I don't know about peppers but I have over-wintered chillies on a south facing windowsill before and they've done well.

The brassicas should be OK but, when you do plant them out, give them a net to protect against butterflies laying eggs which become voracious caterpillars.
Ive also planted chillies!! You name it, Ive planted it (at the wrong time!)  :D . Ive just been reading an article about over-wintering chillis.

Caterpillas have been a real nuisance. I bought some mesh the other week. No matter how many times I thin kjIve removed all the caterpillas, I check the next day and find more! I havnt found any for the past few days, so I think Ive got them all.

I have found a neem spray to work a treat for caterpillars (any chewing insects in fact!) in combination with picking off what I can see and any the eggs too. Using the recipe from Gary at the rusted garden. I'm new myself so similarly finding some YouTube channels very handy :)
