I didn’t know there was such a thing as cucumber soup! I’ll give it a go, thanks! 😋

I like them in stir fry, peel, de-seed and add as one of the last ingredients, YUM.

BBC Good Food has recipes for hot and cold cucumber soups as well as cucumber salads and more.   Just go to the website and put cucumber in the search box.

Like Skandi, I use them in stir fry exactly the same way.  Just long enough to heat them through.

Yes, or a light Asian pickle or in Raita and Panzanella but the cucumber, lettuce and pea soup on BBC Good Food is good too.

Ho-ho!  I have blitzed garlic, parsley, chilli, spring onions and kaffir lime leaves and mixed it into some lean minced beef to make Thai style burgers for dinner.  We'll be having them with cucumber and sesame salad and a courgette and mint garden.

Garlic, parsley, mint, courgette and cucumbers all from the garden.    No rice, noodles or buns so maybe a tomato, chilli and basil salad too - all from the garden.
