I'm not a great fan of his TV shows, but Gordon R's recipe for pork chops with pickled peppers is really good - even if all the smoke alarms do go off while I'm cooking it.
Can only get Hampshire organic pork chops locally I'm afraid..

I’d throw them away, they’ll probably be tasteless and those little ones a bit fiddle arsy to mess about with, they’ll be all water now.
if you want a tomato for cooking or sauces you need one without water and pips in it.

Slow roast them in the oven with whole heads of garlic and olive oil.  It will bring out the sweetness.  Once they are all popped open and the garlic is soft take it out and drizzle with balsamic vinegar, salt, pepper, etc.  Grill some crusty bread and use it as a dip right out of the glass dish.  Amazing.

Yummy yummy... especially with the roasted garlic squeezed out of the clove directly onto the toast with a scoop of molten tomato.  Every summer I sear the roof of my mouth being impatient for them to cool enough to consume.
