Save me from ruining a patio...

I’m about to lay a new patio in the coming weeks, it’s covering an area roughly 8m x 4m using a mix of sized paving slabs based on compacted aggregate (complete) and then sharp sand/cement mix (not yet done). 

The plan was to lay them then grout between them all, bobs your uncle. 

This weekend I’ve seen my brother and he has some wonderful plants growing between some of his old patio slabs. It made me realise, why do I want to grout it when amazing greenery could go in its place. 

Firstly, can I do this on a newly laid patio given my base? If I brushed in soil between the gaps I can plug or seed but I’m unsure if it would work. Has anyone done this?

Secondly, do I risk the patio slabs moving or wobbling without traditional grout (certainly until the roots have taken hold and everything has firmed up). 

Is there anything else I should consider of any advice anyone has?

    We have block pavers laid on sand with a geo membrane underneath. Not much in the way of space between them and pavers sand brushed in.  Weeds still grow very well and some erigeron daisy has started to seed.
    If you don't want to spend time weeding I would grout between most but leave gaps for some soil and seeds.
    If you are laying on a mortar bed there is no reason they should wobble.
