Clipping grapevines

Thanks Fidget.
Im mostly worried that the amount of growth Im cutting off will harm the plant and the crop, but if that’s the way - I’ll get back to it.

I had an arch collapse, my own fault and my own delays I haven’t been able to replace it so I have temporarily got it off the ground and hacked it back:
Is the base okay?
It’s got three woody branches out when I suspect there should only be one?
And all that’s left 😢

I think if you had grapes on them, you could have left them to ripen and then clipped the branches in winter after the leaves have dropped.
