I have to say, moving to North Wales has been one of the best decisions in my life. We are very happy here, close to Snowdonia, close to the coast, it's incredibly beautiful here. Although the weather can be challenging. Property prices are fairly good, although that combination of a small house with large land is hard to find.
If I could pick anywhere in the country and didn't have to consider family, friends or job, it would definitely be North Yorkshire. Some of the most beautiful countryside around, and its always a bit sunnier and drier than on this side of the pennines!
Lived in East Devon for 16 years. Very peaceful as our garden is big enough to keep the neighbours at a decent distance. As mentioned, transport links are the weak link for our village. There are bus links for when we no longer able to drive, but the village is very hilly, and if we are no longer mobile, getting to the bus stop and to the village shop involves a steep climb. Loads of wildlife though, deer, badgers, owls, which we love.
2 bedroom lodge set on 12 acres £325k in North Devon. Used to be a farm apparently. Countryside looks beautiful. You'd certainly have plenty of space and no near neighbours. I don't suppose you need to develop all 12 areas, could re-wild it?

You'll always find someone who is happy to park a horse on a spare paddock if it's too much land.
That 2 bedroom lodge sounds rather like a mobile home, which, although very nice, would not hold its retail value and has an end life. Always a bit suspicious when the photos don't show much of the exterior! It may also not have planning permission to be lived in all year round so I'd be a little bit cautious. Lots of tourists in that area. Good luck with your search - how about Shropshire or Norfolk, both sparsely populated I believe but you would need access to medical help if your OH is not very well.
