The shrub is Choisya × dewitteana 'Aztec Pearl'

Pruning says April/May or after flowering.I have done mine at all times of the year and it still seems to shoot out OK though you may sacrifice flowers for next year.

Go for it then. Make sure your secateurs are sharp and clean and that you cut back to just above a leaf node so you don't get dieback.
