May, or hawthorn blossom, is a lot earlier here than it was in Belgium or is in most of the UK. The Belgians all know the Ice Saints and they're one of the first things I learned there. Not as relevant here but we can get late cold snaps, if not frosts and there is a similar saying to the St Swithin's one about rain for 40 days but I can't remember which saint and there's a caveat anyway.
