Lettuce is very easy as @Pete.8 says. Lots of types available too. You could even get the children involved Chard is also easy, and you can use it like lettuce by just using the leaves when young, or let it grow fully to use the stems. You can grow that in among ornamental plants too.
I have loads of mange tout seeds if you'd like some - you'd do the same as @fidgetbones describes with those.

My boys love fresh peas.. and you still have time to get those in for a crop. I just replanted some spots where the previous peas got munched off by something or didn't germinate. You need a bit of fence for them to grow up. Some suggest twiggy branches, but we tried that once and the boys found it difficult to pick from.. and my youngest got poked in the face too many times for comfort. I've grown them up canes with yarn stretched between for support. I ended up putting plastic bottles on the tops of those canes, as I almost took my eye out on one! (One would never guess peas were such a hazard).
