Found a Plum Tree

When I purchased my home three years ago, the garden was overgrown with flowerbeds covered in weeds growing through gravel etc.. It has taken us until this year to work through it and the last thing we are tackling is a massive Elderflower Bush which is overgrown and taking up a lot of space.  

We started chopping it and discovered a plum tree growing in it (i had noticed some branches starting to stick out of it before we started chopping) It even has small plums on the branches which is so exciting but as you can imagine a lot of the branches are crossing over each other and it seems quite leggy. There is still some way to fully reveal the tree as we are reliant on the garden waste collections but we are getting there.

I have tried reading up online about it but all I can find is information about annual pruning in June. Surely if the tree is pruned in June we will lose the fruit. My question is what is the best course of action  to get the tree in a good state? Should I prune in June or should I wait until the fruit has ripened? When roughly are plums ripe on the tree?
