Plants being eaten from stalk.

I am having some difficulty with plants (lettuce, raddish and strawberries to date)being eaten from the stalk up and the leaves pulled into the ground and chewed up. I have used slug pellets without success. I half suspected leather jackets and treated with nematodes also without great success. Any suggestion would be appreciated.

I use copper tape with some success but the best way to get them is after dark with a torch and a pair of slug scissors.

This offends some people but I am guessing you would be OK as you have used pellets, if not I apologise  :)

Nematodes have to be applied at the right time, or they don't work.
Small weak plants are also more vulnerable to attack, so it often helps to grow them on before planting out.
It could also be rabbits if you have them around.

If it is just the leaves being pulled off it may be birds? Do you have many in your garden?

It is the leaves and stalks, it is as if they are being eaten from underground from stalk up.

    Slugs then, pretty much guaranteed.
