Pruning peach tree

I need help and advice on pruning a greenhouse grown peach tree. I have an old RHS book (The Fruit Garden Displayed) but don’t find the instructions very clear. Just about understandable in theory but now when I try and apply them to the tree we have!

I should have got on with some formative pruning in the last year or so but life got in the way. It also lulled me into a false sense of security as growth has been slow and steady with good fruit. This years it’s going for world domination. I think to might be too late to train it as a fan or espalier so would also like advice on growing as a bush. It’s a variety that can be grown that way (Peregrine).
Can anyone advise me and ideally also point me to a good book or website/u-tube please?
@pansyface - I remember you’ve recommended a book on fruit growing to previous posters (Harry Baker?), is he as good for peach trees?
