The sowthistles are producing seeds, so before digging them out I’d cut the tops off and bag and bin them ASAP to allow as few seeds to drop or float about.

Roundup will kill them if applied properly but it won’t kill the seeds. The plants will die the seeds will fall ... next spring they’ll germinate ... hundreds and thousands of them.
If you dig most of the root out it should be fine
