Salad all year round, is it possible?

Hi all,
I love salad however i just can't keep on top of the slugs, (lack of time, too many slugs, trying to be organic). I do have limited success on my windowsill and have managed to do pea shoots and quick grow lettuce, seem to get two cuttings then they seem to die off.
Any tips for expanding the windowsill effort, salad all year or most of the year - would a potting she help or is there a way you grow that's easy and space conscious ?

Gardening in Central Norfolk on improved gritty moraine over chalk ... free-draining.
I have mine set up in the garage at the moment, best results I've ever had, temperatures in the potting shed are generally too cold in winter, too hot in summer.

They are a significant investment, but then so is a potting shed.
I've never tried to grow stuff in the potting shed. I use it for the process of potting up and sowing seeds. They need somewhere else to germinate and grow.
