Garden Renovation Help

Firstly i hope i’m doing this right, never have i ever been on a forum. And secondly i have very limited knowledge in regards to landscaping. Essentially the garden is the last job on a very long list of a complete property renovation.
So I'm looking for some knowledge. Ive added some pictures, hopefully. So that you have some indication of the job in hand.
I would like the end product to be concrete slabbing to the same point as per currently. From there i would like a complete levelling approach. Taking the left hand-side steps away and all other slab work. Whereby the lower slabbing is currently id potentially like just a simple barked area for the childrens play area.
Hopefully that is now a half decent indication. For the fencing the right hand-side currently has gravel-boarding at the base however the bottom and left handside do not. Would people advise me getting the entire portion redone with the gravel board approach or would other ideas be just as good and cost effective.
My final question until i get feedback is Ive got a tree surgeon on the way to remove the trees. And another friend with a micro digger. Would the advise be to complete drag every last bit of currently soil and slabbing away before reapplying hardcore and the top soil. Or can i get away with digging as much of the weed’s and top away and then just dump a significant amount of hardcore and soil.
- Absolutely any advice would be appreciated, cheers.

Which way does it face, whereabouts in the UK are you (roughly) and what kind of soil have you got?
The middle area, I cant quite grasp my you would dig it up them dump a “significant amount” of hardcore and topsoil - what are you planning to grow there?
Overall I get the impression that you could do with taking sometime to think about what works in your garden - unless this is a “make it blank” so you can sell the property more easily?

I really don't understand that statement.
Is there a reason you want it all on the same level? It's a lot of work to do that, even with diggers. A split level garden is usually far more interesting, and has more scope than just a big flat area - even with children using it
I'd agree re the gravel boards. If the fences aren't yours, you can't just fire in and start changing them. Gravel boards are certainly good, but you'd need to discuss that with neighbours if they are shared boundaries.
I'd also agree with @JoeX about the tree, as it can be very good fun for youngsters, although I certainly wouldn't put bark over paving - that's very dangerous.
What direction does the garden face? Paving is lethal in a shady area, so bear that in mind. If you have children crossing a load of paving in wet weather, it can be treacherous.
I live in west central Scotland - not where that photo is...
