Meant to say at the time on the root colour...would this indicate there's still enough moisture given they're still mostly a light green?

I would go more by the weight of the pot. Get to know what it feels like when it has been dunking in water (5-10 mins) and when it has been left for a few weeks. then you will know when it's time to water. I would repot that orchid with bark chippings. The roots look happy.
