Old grape vine - pruning and care

We have a 70-80 year old grape vine in our property. We have no idea about it's origins, its huge & very heavy. Whoever owned it prior to us decided to build a sun room/conservatory enclosing the roots of the grape in the flooring inside,near the exit route of the conservatory. Its doing really well and the roots are away from  the foundation of our house. We have no intention to remove it but would like to hear from grape wine experts because we have to tame this  humongous, heavy fruiting wine as long as we live & the  humidity in the conservatory is high.I would like to hear from people who had previous  experience with roots of grape vines (some experts suggested to dig it all up  :'( but we don't want to and we would also like to create a good baseline  for  the vines (Like Monty Don has but I don't know where to start, which vine to retain etc) . I talk to it everyday and believe it or not the giant is awake from winter dormancy & I have no idea what to do with it. Advice please

    A photo would help to understand the size of the problem. That would show us the current stucture of the vine and any supports already in place. As it has sprung into life it is too late to do any formative pruning as the sap will be rising fast.

    I presume that watering isn't a problem despite being indoors?
  • Thanks. We don't water it and it was growing like amazon forest due to the warmth in the conservatory. The trunk is 30cm in diameter and the vine is L shaped, 2.2m upwards and the vine parallel to the roof of the conservatory is 3.5m. Currently it's just a trunk bcz we inherited it like that and it has new shoots just popping up now
