What next for watercress cuttings?

Hi
I put a few bits of watercress into water from a wilting bag of salad and they've rooted and sprouted, but I don't know whether to leave them in the water or to pot them. Never grown watercress before and also not sure when to harvest. The stuff you get in bags is lots bigger than this, so will this get bigger, or if I use the small shoots will that be bad for the little plants?
Any advice welcome as ever 🙂

No longer newish but can't think of a new name so will remain forever newish.  B)

    I grow it in a pot of compost and keep it in a container topped up water.  I’ve kept mine for a few years now, it was a purple strain from my local supermarket.  It dies down over winter if kept outside.  When it sprouts at this time of year I start up a new one.

    @Stephanie: I'd get chomping on that crop straight away! It looks delicious (& probably tastes all the better for being fresh off the vine!). [Also best to root some more sprigs in water - you seem to have the knack!!]. Bravo!! {I'm drooling as I type...slobber, slobber}.
