Need help ID this plant

Hey everyone, hoping someone can help me out with identifying this plant. I moved into a new house in October, and the previous owner had a lot of plants I've been trying to figure out. This one though is stumping me. It was growing in 6 different areas around the garden area. I ended up cutting it down in a few areas and when I went to remove the roots, I noticed it had a very well established root ball so I let it grow in the other areas to see if anything bloomed or grew from it. Fast forward a couple months and this is what it looks like. (also if it helps I live in the desert in Arizona). Any ideas?
