Smaller mimosa?

I've got a warm, sheltered, south facing fence, along which I’d like to site a mimosa tree.
I saw them whilst on holiday in the south of France and fell in love with them.
I know some varieties can grow into substantial medium trees, but are there are varieties that perhaps do not exceed the 8m or so mark?
Also, do they prefer acid soil and any other specific condition? The bed will be brand new, so I can pamper it as much as it needs to be!

We have inherited two in this garden, both large, both self seed like mad so a thicket of younglings to clear around and below every year and they are desperately dull all year with that dark green foliage and positively unattractive when their yellow flowers fade.

I'd go for something with a greater spread of interest thru the seasons - bark, foliage, blossom, berries, autumn leaf colour...........

Acer griseum has great bark textures and colours and interesting foliage in spring and autumn.  Other acers are available - https://www.rhs.org.uk/Plants/153883/Acer-White-Tigress/Details and https://www.rhs.org.uk/Plants/48947/Acer-x-conspicuum-Phoenix/Details

Look out for this tree - https://www.rhs.org.uk/Plants/77430/Cercidiphyllum-japonicum-Rotfuchs/Details gorgeous foliage colours thru teh season and smells of caramel in autumn.

Smaller forms of sorbus would give you foliage interest, blossom and berries and attract wildlife.
