Not relevant for a pallet discussion, but I have built my 2 bin composting system out of newspaper "bricks".
A brick is a Uk broadsheet newspaper folded twice and with height about a weeksworth. I just build them to the size and shape I want. I don't use any special bond, but use a single thickness and find that no overlaps helps when I make changes or repairs.
They slowly rot down and become part of the compost.
