I've got various veg in my garden and I'm not sure how some would respond to stir-frying. Some are obvious candidates (sugar peas and courgettes, for instance) - but how about kohl rabi? Tiny beetroot? Bolting pak choi, tatsoi, rocket, other salad veg... now a bit strong-flavoured to use in salad, but will it fry ok?
Since 2019 I've lived in east Clare, in the west of Ireland.
This year most of my root veg is being roasted, but leaves ,which I must admit I grow little of would seem to be good candidates for stir frying. Sorry I can't be more help.
I use all sorts of greenery in stir fries … bolting salad leaves, spinach and chard, radish, beetroot and beetroot and their leaves … all sorts of things like that. What I would say is have a good mix of things so if one might be a little strong it still doesn’t dominate.
As well as stir-frying I blanch a mixture of green leafy veg and even add dandelion leaves and then dress them with good olive oil and lemon juice … like the Greek dish Horta.

@Dovefromabove The garden stir-fry was lovely - thanks for the tips. A couple of rocket leaves added a bit of something different, and beetroot leaves & golden oriole chard gave it interesting colour. I even managed to hide a small courgette in there (hubby isn't keen, but he said it tasted of everything else so he didn't mind).

Red radishes will surprise ysou in stir-fries. A former boss mentioned them to me for stir-frying once. I thought that sounded far-fetched. But they are actually quite nice and crunchy, without tasting very much like radishes at all, once fried up that way.
